Hello weekend!

This margarita is my antidote to a long cold winter of never-ending snow storms.

Lemon Thyme Simple Syrup

Lemon Thyme Simple Syrup

For two margaritas, just combine all of the ingredients in the blender and pulse on high speed until thoroughly pulverized.  I like a nice slushy consistency, but if you prefer bigger pieces of ice, just blend it a little less.   Garnish each with a blackberry and a sprig of thyme.

  • 1/2 cup blackberries (fresh or frozen)
  • 3 tablespoons freshly squeezed lemon juice
  • 2 oz tequila
  • 1 tablespoon Cointreau
  • 1/4 cup lemon thyme simple syrup
  • 2 cups ice

To make the simple syrup; bring 1 cup of water, 1/2 cup sugar, 4-5 sprigs of fresh thyme, and the zest of one lemon to a boil in a small sauce pan over high heat.   Stir to dissolve the sugar, reduce heat to medium, and simmer for 5 minutes.  Remove from heat, allow to cool, strain the solids, and decant.  Syrup will keep for a week or two in fridge.
 

The calendar says it's spring, so I'm shifting gears from snow shoveling to gardening.  Cocktail in hand, this weekend I'm planning my garden and starting some seeds.  The Halifax Seaport Farmers Market is hosting their annual "Seedy Sunday", so hoping to find some exciting new varieties to try.
