Chocolate Drizzled Popcorn Party Mix
It doesn't take long to blow the grocery budget on extra special party snacks and swanky treats during the holidays. I'm guilty of splurging on a few deluxe items so I'll save a little money with some clever preparations using more humble ingredients.
It doesn't get much more economical than popcorn, but dress it up with some salted nuts or dried fruit and a drizzle of chocolate, and you've got a dangerously addictive snack.
My favourite combination is popcorn and salted peanuts with dark chocolate, it's a little salty and not too sweet. White chocolate drizzled over popcorn and dried cranberries is another great variation, or try popcorn and smoked almonds with milk chocolate ...the possibilities are endless.
Proportions aren't exact for this recipe, more like guidelines, really.
For a big batch, you'll need:
- 8 cups of freshly popped popcorn
- 1-2 cups nuts or dried fruit
- 100 grams chocolate
Pop your corn using a hot air popper or the old fashioned way, in a big pot on the stovetop.
Combine the popcorn with whichever add-ins you'd like, and spread the mixture out over two large cookie sheets. You can also do this directly on the counter top covered with a sheet of parchment paper.
Melt the chocolate in a double boiler over simmering water, or in the microwave checking every few seconds because it can burn very quickly. Once the chocolate is melted, drizzle it over your popcorn mixture until no kernel is left untouched, and then lick the bowl.
I like to curl up with a big bowl of this stuff and binge watch Netflix, but it's a great snack when visitors drop by too.
