Creamy Broccoli Soup with Ginger & Coconut
Soup is the ultimate comfort food in my opinion, especially creamy soups.
There are dozens of variations of a 'cream of green things soup' in my repertoire,
but this is the one I crave most often. The exotic flavour
combination of coconut, galangal and ginger with the broccoli is just
dreamy.
I found this recipe on one of my all time favorite food blogs, La Tartine Gourmand. I usually prepare it exactly as described here, with two
omissions. I'm not a huge fan of cilantro, so I leave it out, and salmon
eggs are rarely stocked in my pantry, so I usually prepare the soup with
out them too.
I recently discovered beautiful, fresh, locally grown ginger root at The Local Source Market in Halifax's North End. This shop is a real gem, it's pretty much guaranteed you will always find something interesting and unexpected every time you visit.
Galangal is a spice similar to ginger, with lots of purported health benefits, and an interesting exotic flavour. It's available locally from the Spiceman at the Historic Halifax Farmers Market.
This is a quick and easy recipe to prepare, and the results are truly delicious.
