Mom's Elevator Lady Spice Cookies

Another old favourite recipe from the I Hate to Cook Book, my mom's version of Elevator Lady Spice Cookies.

These are soft chewy molasses cookies with lots of warm ginger and cinnamon spice, perfect on a fall day.

Mom always doubled the original recipe, probably to allow for a certain amount of dough eating.  She also added some soy flour and wheat germ, cause she's sneaky like that.  I've substituted butter for the shortening, only because I prefer the flavour of butter in cookies.

Be sure and start with all of your ingredients at room temperature, it's important that your butter is very soft or the cookies won't be as chewy.

Cream together:

1 1/2 cups soft butter and 2 cups sugar.

Add 3 eggs and 1/2 cup molasses and stir to combine.

Sift the dry ingredients:

  • 3 cups all purpose flour
  • 1/2 cup soy flour
  • 1/2 cup wheat germ
  • 4 teaspoons baking soda
  • 1/2   teaspoon salt
  • 2 teaspoon cinnamon
  • 1 1/2 teaspoons powdered cloves
  • 1 1/2teaspoons powdered ginger

Combine dry ingredients with butter mixture and stir until everything has been incorporated.  To portion the dough, scoop a heaping tablespoonful, and roll into a ball.  Use wet hands to do the rolling in order to avoid sticking.  Place the cookies  on a greased cookie sheet, about 2 inches apart and bake at 375F degrees for 7-8 minutes.

Cool on a wire rack.

These cookies go beautifully with a cup of tea or a glass of cider.
