Blood Orange Diplomatico

I couldn't resist the bright colour and sweet fragrance of these blood oranges at the market this week, I came home with a big bag of them and promptly set to squeezing myself a drink.

I've never been much of a rum drinker, until recently, I was introduced to an amazing rum from Venezuela that's changed all that, Diplomatico Reserva Exclusiva.  Aged for 12 years in wood barrels, it's incredibly smooth, the flavour reminds me of a rich caramel with a touch of spice.  

This cocktail simply combines the sweet bright red juice from a blood orange with the spicy heat of ginger syrup and a shot of this rich amber rum.  I personally guarantee it will brighten your day and warm your bones.

For each serving you will need:

Combine ingredients in cocktail shaker with ice, a quick shake to mix, and pour into a small glass.  Garnish with a slice of blood orange, and enjoy.

*Ginger syrup

This simple syrup infused with fresh ginger is a very versatile base for lots of tasty beverages.  Try it with lime and sparkling water, or muddled berries and prosecco, or simply added hot water with a squeeze of lemon.   It adds a little spicy sweet heat to the mix.

  • 1 cup water
  • 1 cup raw cane sugar
  • 2/3 cup fresh ginger root, peeled and thinly sliced

Over medium low heat, bring all of the ingredients to a slow simmer in a heavy bottomed saucepan.  Reduce heat to low, and simmer for 30-40 minutes.  Strain solids, and decant the syrup into a clean bottle or jar.  This will keep in the fridge for a week or so.
